Portobello, Goat Cheese and Balsamic Flatbread


Today I thought I would share a recipe that I came up with after compiling different recipes and adding some of my favourite ingredients. Since then, it has become a favourite of ours and we’ve had it so many times.


Recipe: (makes 2-3 flatbreads)

1 Portobello Mushroom, thinly sliced

1 Small Onion, thinly sliced

Cherry Tomatoes, sliced in half

1 tbsp butter

Goat Cheese

1/2 cup Balsamic Vinegar

1 1/2 tbsp Brown Sugar

1 tbsp Olive Oil

Naan Flatbread

Preheat Oven to 400


Mix the vinegar and sugar in a small saucepan over medium heat. Stir constantly until the sugar dissolves completely. Bring to a boil. Reduce heat and simmer until the mixture is reduced by about 1/2 (approximately 20 minutes). Set aside.

Saute the onions and mushrooms in butter. Set aside.

Brush the flatbread with olive oil. Add the mushrooms, onions, tomatoes and crumbled goat cheese. Place on a parchment lined baking sheet and bake for 7-9 minutes. Remove from the oven and drizzle the glaze to your taste.
